Egg drop soup ()

It's been a while since I've posted a recipe, so might as well post what I just made for dinner. It's good.

Scramble two eggs with a little bit of soy sauce.

Bring 8 cups of chicken broth to a light boil. (I used a carton of that organic free-range no-MSG no-preservatives no-salt stuff, mostly because the store was out of the MSG-free Campbell's, but this turns out to be cheaper and better-tasting anyway.)

While stirring the broth, slowly pour in the egg mixture, making nice ribbons of egg.

Reduce the heat and allow to simmer. Mix one or two tablespoons of corn starch with a bit of cold water (just enough to make it smooth), and slowly stir that into the soup.

Chop some green onions, julienne a carrot (optional, not everyone likes carrots in egg drop soup but I do), and dice about half a cup of tofu, and stir them in. Add soy sauce to taste. Let it continue to simmer for a while, stirring the whole time.

Enjoy.

Though, in retrospect it may have worked better if I'd done the egg part last. Oh well.
