Easy salmon-based food ()

So, my mom's out of town until next Tuesday, which means that since my dad is totally helpless when it comes to food, I'm cooking until then. Which is great, since slaving over a hot stove is just what I want to do after I get home at 6:30 after 8-odd hours of working with a major asshole, but I digress.

Of course, my dad (who gets home at 5:15 or so) is also clueless about what needs to be purchased at the grocery store, and so I'm just having to make do with what's around.

And what's around? Salmon!

So, tonight I made breaded fried salmon cutlets. It's pretty easy.

Fill a pan about 1/4" deep with olive oil, add rosemary leaves, and heat up.

In a bowl, combine bread crumbs, paprika, some dill seed, and some cilantro. Mix well.

Moisten the salmon cutlet(s) with a little water, and dredge them through the crumb mix, covering and rubbing and otherwise getting lots of yumminess on it.

Place the salmon in the hot oil, and cover. A few minutes later, turn it over.

Serve on rice pilaf with a slice of lemon.

Toss dry rice with vegetables into a pressure cooker (or rice cooker) and lay your salmon steak on top. Cook rice as you normally wood. Presto, instant salmon and rice.

Yes, that's nice too. My rice cooker is packed away, though. (But my mom does have a pressure cooker. Hm.)

Hopefully my dad will have remembered to go to the store today since he had a day off and maybe we can have something other than salmon tonight.
