How to store open wine bottles ()

Vacuum pumps work great. Just evacuate the bottle as much as you can and then store it in the refrigerator. I've had open bottles last for a month with these things. You can get them at any decent restaurant supply and even at some grocery stores (though grocery stores usually charge way too much for them).

Obviously they don't work for sparkling wines (the best thing to do with excess champagne is to turn it into vinegar, as champagne vinegar is a great addition to many recipes!), but for everything else they're great.

I use these things all the time, but still, I wouldn't let a bottle of wine sit around for a month Smile Drink it!

Well the month-old thing was a zinfandel I just couldn't stomach but didn't want to waste. I ended up using it as a deglaze, which it was perfect for.

White zin.

Yesterday I picked up a white and a rose made from Syrah (which sounded a bit interesting), and this week's wine.woot (which I've ordered) is a bunch of supposedly GOOD whites, so maybe I'll find a white that I like. I actually do like Chardonnay when paired with a hearty onion soup, but that seems like way too specific of a food selection for just one wine.

But holy crap my wine cabinet is full.

you're telling me, our wine rack is overflowing. Syrah rose is probably good, the ones I've had have been. Definitely more interesting than whitezin. for red zinfandels you might try something from Paso Robles area.
